"Hi Kati!
Now that we are back from our honeymoon and somewhat settled, we just wanted to take a moment to thank you for the wonderful job you did at our reception. The food was amazing...everyone talked about how it was the best wedding food they ever had. We even had enough left over to snack on the next day. The key-lime curd filled cake was absolutely delicious as well; not your typical wedding cake! Your staff was extremely professional, courteous and added to the fun. Everything was handled so well that I had to worry about nothing! That rain storm sure did add to the excitement, didn't it? Anyway, thank you so much for helping to make our dream wedding a reality!"
Best regards, Brad & Jamie Feldmeier

Icings Swiss Meringue Buttercream is the classic “pastry” buttercream
uses no confectioners’ sugar or shortening. It consists of nothing
but fresh egg whites, butter, sugar and pure vanilla.
Original Buttercream is a light, creamy frosting made with softened
butter, confectioners' sugar and light cream. It can be flavored in many
ways and is used both as a filling and frosting for a variety of cakes
and pastries.
Fondant is a beautiful rolled frosting with the consistency of a tootsie
roll. It has a smooth satin finish and is especially resilient to the
tropical heat. It is made of sugar syrup and glucose, which is cooked
to a specific temperature and then kneaded to a smooth, soft paste. This
paste can then be colored or flavored and used as an icing for cakes
and petit fours.

Grooms Cake Having its roots in Southern Tradition, the Groom's Cake has been around for quite some time
and is making a fashionalble comeback on the wedding scene. Traditionally, a Groom's cake was sliced and boxed for the
unmarried girls attending the wedding to take home and place under their pillows in hope that the man they dreamed of would
be their future husband. Groom's Cake has come along way since then. Today the cake is meant to be a reflection of the Groom's
interests, whether it be one of his hobbies, favorite sport, alma mater, profession, etc...
It's a personal choice when to serve the cake - either at the rehearsal dinner, as an alternate dessert with the wedding cake,
or as a late night dessert for the wedding party. Just because primarily Groom Cakes tend to be a fruit cake or a chocolate
cake shouldn't dictate what the bride and groom should have. Obviously being named "Groom's Cake" it should be a flavor and
theme that the groom enjoys.
